Cupcakes and frosting recipe. Fluffy cupcakes recipe topped with white chocolate ganache, easy to prepare with only a few ingredients.
With only a few ingredients and a little patience, you can have some tasty fluffy cupcakes baked in no time. They are really simple to make and kids just love them. Topped with the white chocolate frosting and nicely decorated, they are excellent for birthday parties.
How To Make Cupcakes And Frosting

- 2 big eggs
- 150 g sugar
- 150 g cake flour
- 60 g cocoa
- 250 g yogurt
- 110 g butter
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 225 g white chocolate
- 150 g whipped cream
- Silver sugar pearls ( optional )
- Food coloring
- Sugar ( optional )
Using a stand mixer, add the cold eggs in the mixing bowl and whisk them until they become fluffy. Then you can add 150 grams of sugar and whisk them together. Start adding the cold melted butter gradually while whisking. Change the stand mixer to a paddle attachment, then add the cold yogurt and continue to whisk at low speed. You can now add the flour, baking powder baking soda and the unsuited cocoa and whisk everything together. If the composition is too thin, you can add more flour.
Put the cupcakes composition in a piping bag. Prepare the tray by adding the mini baking cups, then fill them with the composition. Place the tray in the oven at 170 °C for about 10 – 15 minutes. When they finished baking remove them from the oven and let them cool down. Don’t let bake them longer as they will become really dry. You can serve them as they are, or you can decorate them. If you want you can keep them in a freezer and serve them or decorate them later. Take them out and let them warm up to a room temperature.
Using a food processor, chop all the cold white chocolate. Heat the whipped cream, and in a bowl pour it over the chopped white chocolate. Start mixing them together, and let the chocolate melt in the whipped cream for about 3 – 4 minutes. If you want the frosting to be more creamy, you can use more whipped cream. Place the composition in equal measures in 2 – 3 little bowls. Color the composition by adding a drop or two of food coloring in each bowl. Mix everything until the color becomes uniform. Place the bowls in the fridge for about 2 – 3 hours.
Remove the composition from the fridge and using a hand mixer, mix it until it becomes a cream. Put the composition in a piping bag, and start decorating the cupcakes. On top you can decorate the cream with the colored sugar I describe next, and you can also use silver sugar pearls. If you wish, you can also add vanilla or other flavors to the cupcakes and the frosting composition.
Decorating The Cupcakes
If you want to decorate the topping with some colored sugar, here is how to prepare it. Take 4 – 5 spoons of sugar and place it in a zip plastic bag. Add a drop or two of food coloring, close the bag and mix everything until the sugar is colored. I also used some silver sugar pearls to decorate the cupcakes.
