- 5 g Fresh yeast
- 1/2 teaspoon of sugar
- 500 g white flour
- 1 teaspoon of salt
- 350 ml warm water
Preparing The Dough
Start by mixing together one half full teaspoon of sugar with the yeast and the 350 ml of warm water in a container. Mix them well until the entire composition dissolves properly. In the mixer’s bowl add one full teaspoon of salt and the 500 g white flour. Mix them for a little to have the salt properly mixed with the flour, then add the other composition we prepared earlier.
You can do this by hand, but if you have a mixer then it’s a lot easier. Im using Artisan From KitchenAid. Start mixing the entire composition at a low speed, increasing it gradually. Mix it well for about ten minutes. If the dough it’s too soft gradually add more teaspoons of white flower as needed.
Growing The Dough
Once the entire composition is mixed, sprinkle some white flour on the table and remove the dough from the mixing bowl. Place it on the table and give it the desired shape depending on the container you will use to grow it.
Place it for one hour in the oven. Make sure the oven it’s turned off. After one hour, remove the dough and give it the final shape. I personally use a wooden basket for this. Make sure you also add some more white flower into the basket, then place the dough inside. Place it again in the turned off oven for one more hour.
Baking The Bread
First while preparing the bread ( dough ) for baking, start the oven and heat it up to 240 °C. For good results from all my tries so far, I discovered that baking on a baking stone inside the oven gives you the best results. Very close or similar to the brick oven. So have the stone in the oven as well at this point. If you do not have a stone then just use a regular oven tray.
Once the oven reaches the proper temperature you are ready for baking. Make sure the oven heats up while you prepare the bread shape and as soon as you are done, you will place it in the oven right away. Before doing that don’t forget to make some surface cuts into the dough as shown in the video.
The reason we want to do these steps really quick, it’s so the dough will not start dropping. Once you placed the shaped bread either on the stone or the baking tray inside the oven placing a baking paper on top, then let it bake at 240 °C for 30 minutes. Now lower the temperature to 220 °C and let it bake for 20 more minutes. Now that you are done, take the bread out of the oven and let it cool down. Your bread it’s now ready.
How To Store Homemade Bread
Once the bread cooled down, you can slice it if you wish. If you want to keep the bread fresh for a longer time, you can keep it in the freezer, then warm it up in the oven or microwave when you need it. This way your fresh and tasty bread will last longer. In my family is not the case. We eat bread way to fast, so I don’t have to stress much about keeping it fresh.
